Recipe: Citrus quinoa salad.

It's summer. It's hot. Chances are you don't want to do a lot of cooking. I can raise my hand and say the same thing! At this point as well turning on the oven is a major no-no!

If you're looking for a delicious dish that won't turn your house into an inferno try my citrus quinoa salad!

It's fresh, full of flavour and it's served cold. It will also keep in the fridge for up to 5 days after you make it, making this a great dish for meal prep as well.

The health benefits of quinoa.

Quinoa is considered a superfood which means it's very nutrient-dense. It's one of the world's most popular heath foods.

It's high in protein, gluten-free, and is a complete protein which means it contains all 9 essential amino acids. This makes it a great protein source for vegetarian and vegan diets.

In reality, you could make this dish with any type of grain, but I find quinoa is great for this because it's subtle flavour doesn't get in the way of the other ingredients.

Let's get started!


1 1/2 cups cooked quinoa (about 1 cup before cooking)

1/3 cup roasted sunflower seeds

1/2 cup chopped unsweetened dried cherries (can be subbed with cranberries)

1/2 large navel orange, peeled and chopped

1/2 cup chopped kale

1/2 Tbsp lime juice

Add 1 cup of quinoa and 1 1/2 cups of water to a pot. Bring quinoa to a boil, then turn heat down to a simmer. Simmer quinoa until all the water is gone (around 15 minutes). Chill in the fridge while prepping other ingredients.

After the quinoa has cooled combine all ingredients in a large bowl. Makes 4 servings. Feel free to add any protein of your choice to this dish as well.
