I'm not sure where you're from but here in Calgary we're getting a big dump of snow, and it's still coming!
It makes me want to sit inside with a hot cup of hot chocolate, with my slippers on, watching the snow falling.
Since that's my mood today I thought I'd share with you a more health-conscious hot chocolate recipe I've toyed with over the last couple of cold seasons.
This recipe calls for sweetener. In reality, if all you have is sugar to work with that's completely fine! One cup of hot chocolate is not going to be detrimental (especially around the holidays).
Depending on what you make it with it can also be classified as dairy-free, and vegan.
-2 cups milk of choice (I use coconut or cashew)
-2 Tbsp unsweetened cocoa powder
-1 Tbsp monk fruit sweetener (or another type of sweetener/sugar)
-4oz unsweetened bakers chocolate (make sure to use unsweetened or you will end up with a very sweet drink!)
-1 tsp cinnamon (optional, but recommended)
-Heat milk and bakers chocolate in a saucepan until the milk is foaming and the chocolate has melted.
-Whisk in cocoa powder, monk fruit sweetener, and cinnamon if adding it. Whisk until smooth.
-Simmer for 2 minutes. Serve immediately.
Makes 2 serving.
