Recipe: Sweet potato casserole.
With the holiday's coming there's going to be a lot of delicious food. Maybe you've been doing some holiday cooking or some holiday baking.

Regardless of what your favourite part of Christmas dinner is, I have a recipe that will add flavour and nutrients to your plate!
Health benefits of sweet potatoes
Sweet potatoes aren't just delicious, they're nutritious and have many health benefits as well. They're a great source of fibre, vitamins, and minerals, they promote gut health, support brain function and you're immune system, and support healthy vision.
The pecans in this dish also have a number of benefits. Pecans are full of protein, healthy fats, and fibre which keep you feeling fuller longer. They're also a great source of calcium, megnesium, and potassium.
Sweet potato casserole ingredients
-2 cups sweet potato, cubed
-1 Tbsp cinnamon
-1/2 tsp turmeric
-1/2 cup chopped pecans
-1/4 cup maple syrup
-1/4 cup granulated sweetener of choice (monk fruit, sugar, sweetener)
Directions:
-Preheat oven to 350F.
-Boil sweet potato cubes in water until tender. Around 15-20 minutes. Mash until there are no clumps left.
-Add cinnamon, turmeric, and sweetener to sweet potatoes. Mix until well combined. Scoop into a small baking dish and spread evenly.
-Mix chopped pecans and maple syrup in a separate bowl. Layer over sweet potato mixture.
-Bake in the oven for up to 10 minutes or until the maple syrup has hardened.
Makes 4 servings.
